As we arrived in Japan over two weeks ago we tryed the Kansai version of Okonomiyaki, which is considered the "real" or "original" one. The Hiroshima style is really different though. It's always noodle-based, the choice is between soba and udon. In Kansai you can avoid noodles. Another difference is that while in Kansai (Osaka style) okonomiyaki most ingredients of the batter are mixed in advance, here in Hiroshima they come layer by layer: noodles, egg, cabbage, cheese, seafood/meat, etc. one after the other, so you get the layered product at the end.
We queued up for this lunch at Nagata-Ya place which serves only okonomiyaki with different fillings. We kicked oysters and the "original":
